Sassotondo Toscana Bianco Numero Sei · 2018
Greco and Sauvignon from the Sovana vineyards. The 1995 plant is trained with cordon (sauvignon blanc) and double guyot (greek) with 4800 plants per hectare. Manual harvest and sorting of the grapes, separate fermentation for each vine: in steel for the Sauvignon with short maceration; in steel, with prolonged stay on the skins and subsequently in barrique for the Greco. No yeasts are added. The wine ages for 12 months in second passage barriques. It is put on the market after a few months of aging in the bottle. Deep golden yellow color, fat already in appearance, it offers aromas ranging from citrus flowers, to ripe white fruit, to cedar wood with a fresh balsamic background note. Great structure and persistence. Original and very pleasant.
