Sniffing a glass of Aloers, you might well ask yourself whether a white wine could ever be more elegant than this. Even knowing the expertise and Recaredo's long track record in the world of sparkling wines, the house's still wines, those that Celler Credo have been making since 1990, never fail to amaze us every time. The winery's catalogue nowadays is extensive, and it's founded on three pillars: the Xarel·lo grape, organic-biodynamic agriculture and infinite attention to detail. The Celler Credo wines are direct, honest and individual, they are wines which shun trends and superfluous effects in order to enable the terroir that gives life to its grapes to express itself without any restrictions. Aloers, the name in Catalan given in the Middle Ages to peasants who owned their land and weren't required to pay any tribute, is one of the Credo project's spearheads. The grapes with stems are macerated for several hours before fermenting, and afterwards rest on their lees for two months, until becoming a fresh, vibrant and exciting wine, that takes us off to a meadow of yellow flowers and fennel to pick up aromas of pine and resins in the distance; the aromatic element is so subtle and at the same time so complex that it's captivating. Unctuous, moderately saline, and above all other considerations, elegant, the hallmark of Recaredo and Celler Credo.

Discover Penedès Nestled between the Mediterranean Sea and the mountains, the Penedès wine region, located in Catalonia, is known for producing some of Spain's finest sparkling wines. With a privileged climate and a rich winemaking tradition, Penedès is a treasure trove for wine lovers. Variety and Quality The Penedès is one of the large, historic DOs in Spain that has been establishing itself over time as an area capable of producing quality white, red and rosé wines, apart from Cava. The wineries have been pioneers both in the field of production by applying new technology to wine-making processes, but also in the introduction of foreign varieties hitherto unknown in the country. One could say that the Penedès is itself like a small country where a large selection of both native and worldwide grapes has become firmly rooted - thereby presenting an extremely interesting vine-growing perspective as regards innovation and differentiation. This means that both long-established varieties like Parellada, Sumoll and Malvasía de Sitges are well represented, and in complete contrast, foreign strains like Incroccio Manzoni, Riesling and Cabernet Franc are in evidence too. It is worth noting the whole-hearted effort that wine producers have put into Xarel·lo, the native white grape variety that plays a big role in Cava, but when used on its own to produce wine, the result is a quality product, with great varietal expression, and very well suited to barrel fermentation. Situated to the south of Barcelona, in a geographical sense we can distinguish three separate zones according to altitude, distance from the sea and soil type. The area known as Penedès Superior is the furthest from the sea, the highest above sea level, having cooler temperatures, and with basically clay soils. The most extensive and main production area is Penedès Medio, boasting a flat relief and mild temperatures. The coastal part encompasses the Macizo del Garraf, characterized by its chalky soils and markedly Mediterranean climate.
